In addition to its extraordinary natural beauty, Indonesia is also known as a country that has a variety of delicious food preparations. Rendang, or randang in the Minangkabau language, is a meat-based Minangkabau dish originating from West Sumatra, Indonesia. This dish is the result of a long low-temperature cooking process using various spices and coconut milk. The cooking process takes hours (usually about four hours) until all that’s left is chunks of meat and jet black bran. At room temperature, rendang can last for weeks. Rendang that is cooked in a short time and the coconut milk doesn’t dry out is called kalio, which is light golden brown in color. Rendang can be found in Padang Restaurants around the world. This cuisine is popular in Indonesia and other Southeast Asian countries, such as Malaysia, Singapore, Brunei, the Philippines and Thailand. In its native Minangkabau region, rendang is served at various traditional ceremonies and special events. Although rendang is a traditional Minangkabau dish, cooking techniques and the choice and use of rendang seasonings vary by region. For information, in 2011, rendang was named the dish that was ranked first in CNN International’s list of World’s 50 Most Delicious Foods. In 2018, rendang was officially designated as one of the five national dishes by the Indonesian government. Rendang is a popular food today, not only in Indonesia but also in the world. Because rendang is so popular, even world-renowned chef from England, Gordon Ramsay, during his visit to West Sumatra in 2020 to shoot the film Gordon Ramsay: Uncharted Season 2 Sumatra’s Stunning Highlands, he took direct lessons to make rendang to a cooking expert rendang there.
