Mom’s Chicken & Dumplings • One whole chicken • 1 – can Cream of Chicken soup OR chicken broth • ¼ tsp – Baking powder • 1 - egg • 1 Tbs – Oil • 2 cups – Flour (enough to make stiff dough) Directions: Cook one whole chicken in a large pot with lots of water until tender. Add 1 can of cream of chicken soup or chicken broth. Remove 1 cup of broth and set aside. Add 1 Tbs oil and ¼ tsp baking powder and enough flour to make a stiff enough dough. Knead lightly then roll very thin to slice, about 2 cups of flour to begin with. Add more if needed. Remove the chicken from the pot to cool. Keep the broth boiling. Slice dumplings and drop into pan of boiling broth. When all the dough is in the pot, add the pieces of de-boned chicken back to the pot. Let boil about 15-20 minutes covered.
